David Franz Winemaker's Dinner at The Fireplace, Hyatt Regency Sanctuary Cove*
Hyatt Regency Sanctuary Cove's signature restaurant, The Fireplace, will team its tantalising fare with the fine wines of David Franz for the next in their series of Winemaker's Dinners, on Thursday, 10 May 2012.
David Franz will host the event, sharing with guests his expertise on the finer points of wine making and appreciation. As the son of industry legend Peter Lehmann, Franz's natural instinct and skill stems from a strong heritage and career in estates across Australia and internationally. He started his own vineyard in 2003 and is now regarded as a highly talented and innovative winemaker.
Franz handles the entire creation process himself based in South Australia's renowned Barossa Valley, handcrafting his wines from the vine to the bottle. Aficionados of the Franz brand savour his matured wines, which are typically released with the benefit of added bottle age.
David's knowledge and charisma are sure to make for an engaging and enjoyable evening at Hyatt Regency Sanctuary Cove.
Sous Chef Obie Faulkner of The Fireplace has designed a six course degustation menu especially for the occasion.
"We have worked closely with David to design a menu that will complement and showcase his most sensational drops, as well as offer diners an unforgettable experience," he said.
For $130, the evening is sure to delight ardent food and wine lovers and will commence at 6.30pm with pre-dinner drinks, serving a 2008 David Franz Nicole Sparkling Cabernet Sauvignon Shiraz.
Guests will be seated for dinner by 7pm and treated to a cold entrée of spiced squid carpaccio, Spanish chorizo, east coast oyster salsa, squid ink marshmallow and sea weed linguini, accompanied by the 2010 Long Gully Road Semillon, and followed by two hot entrees, the first comprising Gooralie free range pork belly, green pea pearls, tender coconut and Malibu to offset the flavour of a 2007 Larrikin 111 Grenache Shiraz Cabernet Sauvignon Mataro. The second hot entrée, of blood orange granita and champagne, has been matched with a 2006 Benjamin's Promise Shiraz.
The main course is a continuation of indulgence, consisting of a Ranger's valley eye fillet with a porcini crust, furikake and blueberry kumra gratin, complemented by a cellar release of the Georgie's Walk Cabernet Sauvignon. For a sinfully sweet finish, a strawberry consommé with petit fresh fruit salad, basil foam and almond crunch will be served, and topped off with a 2010 David Franz 'Sticky' Late Harvest Riesling. Finally, a platter offering King Island Black Label Loorana Double Brie with slow roast plum and beetroot, clove oil and micro celery will leave a lovely lasting taste on the palette, before the event wraps up with freshly brewed tea and coffee.
