The Fireplace restaurant plates up summer at Hyatt Regency Sanctuary Cove
In amongst the coastal summer breezes and set by the pristine white sands of the salt-water lagoon, Hyatt Regency Sanctuary Cove's signature restaurant, The Fireplace is embracing the season with a delicious summer menu.
In the spirit of contemporary Australian cuisine, the updated menu features a fresh injection of gourmet seafood dishes and the new fare is perfect with the intimately lit, casual style of the restaurant overlooking The Fountain Terrace.
Open nightly from 6.00 - 10.00 pm, The Fireplace has a chic manor-in-the-country feel and the open plan kitchen, with chefs on show as they prepare contemporary grill and provincial style food, creates an atmosphere to relax and enjoy the new-season menu.
Sous Chef Obie Faulkner prides himself on creating his menu from fresh local produce, and new additions such as King prawns with preserved lemon and coconut prawn toast, mango carpaccio, tamarind aioli or Caramelised scallops with asparagus, tomato confit and wild mushroom duxelle, and Mulloway with sauce romesco, chorizo sausage and lemon are sure to showcase the exceptional regional offerings of Queensland.
Featuring cherry wood wine cabinets and custom built wood-fired ovens, The Fireplace presents a unique Queensland dining experience where the décor has been inspired by the grandeur of a 1940's homestead.
For the restaurant regulars, the new menu still features The Fireplace signature dishes, Roasted field mushrooms, rocket, thyme and Meredith goat's cheese feta and Slow roasted free range duck, spinach, raisins and Marsala jus.
