The role of curry in colonial gastronomy*
As part of its colonial-gastronomy series, the NSW Historic Houses Trust will explore the role of curries with a workshop at Elizabeth Farm, Rosehill from 10.30am to noon on Sunday 14 November.
In 1812, curry was an exotic dish that Maria Macarthur had been advised to include in a fashionable dinner menu.
By the Victorian era, these Indian-inspired dishes had become a convenient everyday way to use leftovers.
Rediscover popular Anglo-Indian dishes such as kedgeree, mulligatawny and piccalilli and make your own curry powder from a 19th-century recipe.
